A cocktail combining deliciously sweet honey with the slight sting of ginger. Pour 1 or 2 shots of rum (whisky also works well) in a glass with 2 shots of Apricot Brandy and then fill the rest of the glass with equal parts Medieval Mead and Ginger Beer. Throw in a few mint leaves to make it extra refreshing.
For the decorative garnish, hold the cocktail glass upside down and dip it in to runny honey, just enough to cover the rim, then dip the glass in to Demerara sugar. Make a cut half way through a small piece of honeycomb, then slide it over the rim of the glass.
